Creamy Cucumber Salad


INGREDIENTS LIST

  • 3 cucumbers, thinly sliced (peeling is optional)

  • 1 small red onion, sliced

  • 1/2 cup sour cream

  • 2 tablespoons mayonnaise (optional)

  • 2 tablespoons fresh chopped chives

  • Salt and fresh cracked black pepper, to taste

DIRECTIONS

1. To make the creamy cucumber salad: Combine cucumber and red onion in a medium bowl. 2. In a small bowl, combine 1/2 cup sour cream, 2 tablespoons of mayonnaise (if using), chopped chives and pepper. Mix well to combine. 3. Stir the dressing into the cucumber and red onion. Add salt to taste just before serving the creamy cucumber salad. Enjoy! Note: You can let the salad chill in the fridge for 30 minutes to let the flavors mingle.

This creamy cucumber salad is a refreshing summertime recipe for any picnic, barbecue or potluck.

WHAT TYPE OF CUCUMBER SHOULD I USE FOR THE SALAD?

Feel free to use whatever kind of cucumbers you’d like in this salad recipe. We tend to prefer long English cucumbers for this recipe because their skin is super thin and they don’t really require peeling (you can still peel them if you like, of course). If you have regular field cucumbers on hand, the skins can be tough so we would suggest peeling them. The seeds on regular field cucumbers are also larger so you can them in half lengthwise and scrape the seeds out to keep the cucumber salad from getting too watery.

HOW TO MAKE THE DRESSING

We use sour cream for the base of the dressing for this cucumber salad, we add a dab of mayonnaise but it is optional. If you like some tangier taste, add a few drops of vinegar. To make the dressing healthier, substitute Greek yogurt for sour cream. Feel free to use fresh chopped dill greens instead of chives.

CAN I MAKE THE CUCUMBER SALAD AHEAD OF TIME?

Yes! This cucumber salad recipe tastes best when it’s made at least 2 hours in advance and refrigerated to let the flavors combine. Make sure the cucumbers don’t get soggy and stay crispy. If you’d like to make it the day before, prepare the cucumbers and onions and toss with the dressing just before serving.

HOW LONG TO KEEP THE CUCUMBER SALAD?

The creamy cucumber salad will last for 2 – 3 days as long as you keep it cold in an airtight container.
