Hush Puppies




Vegetable Oil

1 ½ cups self-rising white cornmeal mix

¾ cup self rising flour

¾ cup diced sweet onion

2-3 Tablespoons jalapeno, chopped

2-3 Tablespoons red pepper, chopped

1 ½ Tablespoons of sugar

1 large egg, beaten

1 ¼ cup buttermilk


Pour oil to a depth of 3 inches in a Dutch Oven, heat to 350 degrees. Combine cornmeal, flour, onions and peppers. Add egg and buttermilk, stir just until moistened. Let stand for 10 minutes. Drop batter by rounded tablespoonfuls into hot oil and fry in 3 batches, 2-3 minutes each side or until golden brown. Keep warm in a 200 degree oven until the entire batch is finished
