INGREDIENTS LIST
1 head broccoli, chopped into small florets
1/2 head cauliflower, chopped into small florets
1 cup diced ham (or Genoa salami)
1 cup halved cherry or grape tomatoes
1/2 cup halved black olives
8 oz mozzarella, cubed
Grated Parmesan, for garnish
Dressing:
1/3 cup white wine vinegar
1 tablespoon Italian seasoning
1/2 teaspoon garlic powder
1/2 cup extra virgin olive oil
Salt and pepper to taste
DIRECTIONS
1. To make the broccoli cauliflower salad: In a large salad bowl, combine all the ingredients for the salad. 2. In a jar, mix up olive oil, vinegar, Italian seasoning, garlic powder, salt, and pepper. 3. Pour the dressing over the salad and toss to coat everything. Chill and serve the broccoli cauliflower salad whenever you’re ready. Enjoy!

This easy broccoli and cauliflower salad is the best kind of salad for potlucks, parties and family gatherings! Each ingredient has it’s own tasty texture and flavor. The salad does not get soggy quickly so you can make it ahead and keep refrigerated. Prepare the salad per the instructions and refrigerate covered, keeping the prepared dressing in a separate container. DO I NEED TO COOK THE CAULIFLOWER AND BROCCOLI?
No! For this broccoli salad with ham, the broccoli and cauliflower are raw! The veggies are soaked with the dressing and become super flavorful. Just make sure cut the cauliflower and broccoli florets in manageable sizes to avoid chewing difficulties!
WHAT INGREDIENTS CAN I SUBSTITUTE?
You can sub black olives with pitted green olives and use any other hard cheese you like: cheddar, pepper jack, provolone etc… If you’re not counting carbs, a handful dried cranberries might add a nice sweetness to the broccoli cauliflower salad. Chopped walnut would add a nice crunch to the salad too!
HOW LONG TO STORE THE BROCCOLI SALAD?
For storing, make sure to store this broccoli cauliflower salad in an airtight container. The salad last up to 2-3 days in your refrigerator. You can extend storage time if you prepare everything in advance. The salad dressing is especially great to make ahead of time – just prepare the dressing with the ingredients as per directions and keep it in the fridge until you’re ready to serve. Cut and chop all the ingredients ahead of time too! You can even toss them together in a bowl and keep in the refrigerator until ready to serve along with the dressing.
