Quick Cooker Frittata


Ingredients


6 large eggs

4 tablespoons water

1 tablespoon of butter or oil of your choice

1 small yellow onion, diced

1/2 cup red pepper, diced

1 cup ham, chopped

1 cup mushrooms, chopped

1/2 cup smoked cheddar cheese, shredded


Directions


1. In a mixing bowl whisk 6 eggs with 4 tbsp of water. Salt and pepper to taste.

2. In a skillet over medium heat, add 1 tablespoon of butter or oil. Add your onion and cook until translucent. Once your onion is translucent, add your red pepper, ham, and mushrooms. Cook over medium heat for 3-4 minutes, until your mushrooms are cooked. I recommend sautéing these ahead of time to release the water from your mushrooms and ham so your Frittata isn't runny and soggy,

2. Pour eggs into a greased ceramic pot for the quick cooker. Add your ham mixture and cheese, give a quick stir to evenly incorporate everything.

3. Add 1.5 cups of water to your Quick Cooker. Set the quick cooker to steam. And adjust the time to 13 minutes. Let the steam release naturally for 10 minutes and then press quick release to release any steam.

4. Pull out with oven mitts. Slice and enjoy!
