Cracker Toffee

1 sleeve of saltine crackers

2 sticks butter

1 cup brown sugar

12 oz pkg of milk chocolate chips

- (chopped nuts ae optional)

foil lined baking sheet sprayed with nonstick spray

- (my pan is close to the 1/4 sheet cake pan, maybe just a bit bigger)


1. Preheat oven on to 350, line the baking sheet with foil and spray with Pam.

2. Layer the cracker on the baking sheet. Will probably need to break some in half for the last row.

3. In a saucepan melt butter and then add brown sugar. Bring to a boil. Boil hard for 3 minutes stirring constantly. Will be thick and frothy. Pour immediately over the crackers and smooth to the edges.

4. Bake in oven for 10 minutes.

5. Pull out of oven and sprinkle with the chocolate chips. Let it sit till you can see they have melted (3-5 Minutes)

6. Spread smooth and let cool till firm. 

7. Peel off the foil and break into pieces. 

*** If you like your toffee bars more chewing take off immediately at the 3 minute mark and pour over crackers. I like mine more crispy so I cook it till about 4 minutes. Must be careful to keep a close eye on it and stir constantly because it burns easily.
